Prime Rib Vegetable Beef Soup Slow Cooker Recipe
Prime Rib Vegetable Beef Soup is the perfect nourishing soup for a cold winters day.

Made up of bits of leftover prime rib, tomato juice and hearty vegetables, this prime rib soup is the best way to use up leftover standing rib roast. While Prime rib is my favorite choice, any type of beef or vegetables can be used in this versatile recipe!
What is in Prime Rib Roast Vegetable Beef Soup?
The best part about this vegetable soup recipe is that it is highly adaptable and you can use up practically any leftovers you have.
This recipe calls for leftover standing rib roast, however you can use many different cuts of beef such as short ribs, leftover prime rib bones, chuck shoulder, beef chuck roast, stew meat, leftover steak, leftover au jus and even fat trimmings.
Any leftover meat scraps will give great flavor to this crock pot vegetable beef soup.
Hearty vegetables such as potatoes, carrots, green beans, corn and lima beans work perfectly in this prime rib soup recipe.
Feel free to mix in any vegetables you have on hand–peas, celery, onion and even barley would also add lots of flavor.
Ingredients:
- Beef cut into 1 inch cubes (about 2-3 cups)
- Beef broth (about 6 cups)
- Tomato Juice or V8 (about 6 cups, we prefer spicy V8)
- Mixed Vegetables such as corn, peas, carrots, green beans, potatoes, okra, lima beans, tomatoes, etc. (about 4-5 cups)
- 3 tsp salt
- 1 tsp black pepper
All measurements are approximate because this soup is so VERY versatile. I’ve tried so many combinations and it is always fantastic! Feel free to get creative!
Seasonings can easily be adjusted and added to, but start with this amount and adjust from there.

Instant Pot Instructions:
In an Instant Pot combine beef broth, tomato juice, vegetables and seasonings. Select soup mode and turn the steam valve to the sealing position. Let the soup cook on soup mode for the pre-programmed time. When the Instant Pot soup mode is complete, vent the steam valve and remove the lid. Serve soup with crackers, crusty bread or a grilled cheese sandwich.
Slow Cooker Instructions:
In a slow cooker, combine beef broth, tomato juice, vegetables and seasonings. Cook on low for 8 hours or until beef is cooked through and vegetables are fork tender. Serve soup with crackers, crusty bread or a grilled cheese sandwich.
Store leftover soup in an air tight container in the refrigerator for 3-4 days.
My favorite way to serve this soup is with a sourdough grilled cheese sandwich or a slice of crusty sourdough bread.

Water can be substituted for beef broth, but broth will add lots more flavor. Try Bloody Mary mix instead of tomato juice for a richer spice flavor. Add in barley to make beef barley soup or egg noodles to add more heartiness to the soup. For a richer flavor, sear meat in olive oil on all sides before adding the rest of the ingredients. The fond or brown bits on the bottom of the pot will be deglazed by the broth and add lots of flavor to the soup. Add in fresh herbs like rosemary or fresh thyme for more pungent flavor.
