Easy Strawberry Ice Cream

Strawberry ice cream is the perfect antidote to a hot summer day. This easy strawberry ice cream requires no cooking, making it the perfect option for a spur of the moment indulgence. Made with simple, fresh ingredients you will finish eating this ice cream feeling refreshed and ready for more summer fun.

I have to admit, I am on a strawberry kick lately. And who wouldn’t be? Warm, sun ripened strawberries are in season here and they are practically begging to be consumed. From strawberry basil lemonade, to strawberry peach cobbler and now strawberry ice cream, we aren’t letting one berry go to waste!

Choosing Quality:

The easiest way to make delicious food is to start with quality ingredients. We are incredibly blessed in my area to have a wide variety of local dairy, produce and meat products. I am incredibly thankful to the farmers and gardeners who make these ingredients available to our community.

As always, i’ll be using Legacy Dairy milk in this recipe. Not only does it taste delicious, but because it is not homogenized, it is one of the few milks I can digest well. In addition to easier digestion, because it is not homogenized the cream will rise to the top, making it extra easy to skim some off the top for your coffee when stored in a wide mouth jar. Win win! I also think using fresh, local strawberries really make this ice cream shine. Store bought strawberries will work in a pinch, but nothing compares to fresh strawberries when they are in season.

Ingredients:

  • fresh strawberries
  • whole milk
  • lemon juice
  • white sugar
  • salt
  • vanilla

Equipment Needed:

  • Electric Ice cream maker (be sure to pre-freeze the ice cream bowl)
  • Mixing bowl
  • Measuring cup
  • Paring knife

Preparing the Strawberries

Dice strawberries into medium sized chunks to make 1.5 cups of chopped strawberries. Macerate the strawberries with two tablespoons of white sugar. Macerate simply means to soften or sweeten by soaking in a liquid. You can also macerate using sugar instead of a liquid. The goal here is to help the strawberries release some of their liquid to form a “sauce” or “glaze” that we will slowly incorporate into the ice cream as it churns. To macerate the strawberries, sprinkle the sugar on top of the cut berries and mash until you have a slightly chunky glaze. I use a Mix ‘N Chop from Pampered Chef for this, but a fork or potato masher would also work. Once thoroughly mixed, add in a splash of lemon juice and mix to combine. The lemon juice brightens the flavor of the strawberries.

Preparing the Ice Cream Base:

This basic ice cream base recipe can be used for any variation of ice cream you can think of. Since this recipe does not require any cooking, it is perfect for whipping up a quick snack or dessert on the fly.

First, combine the whole milk with the vanilla and salt. Stir in 1/2 cup of strawberry mixture. That’s it! Now it is time to make ice cream!

Making the Ice Cream:

Instructions may vary from machine to machine, so I will give instructions for the machine I use, the Cuisinart Automatic Ice Cream, Frozen Yogurt & Sorbet Maker.

Remove the previously frozen ice cream bowl from the freezer and place into the ice cream maker. Turn the machine on and slowly pour in the milk mixture. Let ice cream churn for 10-15 minutes or until it starts to firm up. Slowly add in the remaining strawberry mixture. Let churn another 5-10 minutes or until the ice cream is soft set. If you prefer a firmer ice cream, cover the bowl and set in the freezer until it reaches the desired texture. Serve and enjoy!

Strawberry Ice Cream

This homemade strawberry ice cream is the perfect way to cool down on a warm summer day. This recipe is a no cook recipe, so you will be scooping up a bowl of ice cream in under an hour!
Prep Time 10 minutes
Additional Time 25 minutes
Total Time 35 minutes

Ingredients

  • 1.5 cups of sliced strawberries
  • 3 cups of whole milk
  • 1 cup + 2 tablespoons white sugar divided
  • 1 teaspoon of vanilla
  • splash of lemon juice
  • pinch of salt

Instructions

  • Slice strawberries into medium sized pieces.
  • Sprinkle with 2 tablespoons of sugar and splash of lemon juice, mix well.
  • In a mixing bowl, add milk, remaining cup of sugar, salt, and vanilla.
  • Add 1/2 cup of strawberry mixture to the milk.
  • Following the manufacturers instructions for your ice cream maker, pour milk mixture into the frozen ice cream bowl as it churns.
  • As the ice cream begins to thicken, begin to add remaining strawberry mixture. This will usually be around the 10-15 minute mark.
  • Once the ice cream is set to a soft serve texture, remove the ice cream bowl and serve, or place in the freezer for a firmer ice cream.
  • Enjoy!

Notes

Substitute 2 cups of milk for heavy cream for a creamier, more decadent ice cream.
