I love the simplicity of this biscuit dough because you don’t have to worry about cutting butter into the dough and making sure the butter stays cold. Simply mix together heavy whipping cream, self rising flour, sugar and some blueberries and you’re done!
I always brush the tops of biscuits with butter immediately after I pull them out of the oven. This gives every bite a little butter flavor. I love the addition of sweet blueberries in this recipe to counter balance the salty buttery flavor of the biscuits. These homemade biscuits are both sweet and salty-a combination that’s heaven made.
What You Need to Make Biscuits:
- Large bowl and wooden spoon (or danish dough whisk)
- Rolling pin (you can use your hands to press out the dough if you don’t have one)
- Biscuit cutter or mason jar
- 10.5 inch Cast iron skillet (my preference) or a baking sheet
Optional:
- Basting brush- to brush biscuits with butter
Ingredients:
- Heavy whipping cream- heavy whipping cream provides both the fat and liquid in the biscuit dough instead of traditional butter and milk.
- Self rising flour- self rising flour already has baking powder and salt mixed in. If you are using all purpose flour, you will have to add a leavening agent.
- Fresh or frozen blueberries
- Sugar- a tiny bit of sugar is added to make these biscuits sweet instead of savory.
- Salted or unsalted butter (this is up to your preference, I typically use salted butter)
How to Make Blueberry Biscuits:
- Preheat the oven to 475 degrees. Place your cast iron skillet in the oven while it is heating to preheat the skillet.
- In a large bowl mix heavy whipping cream with the dry ingredients. Mix the sugar and self rising flour together with the cream using a wooden spoon.
- In a separate small bowl toss the blueberries with a few tablespoons of flour to coat. This step is optional, but keeps the entire dough from turning blue.
- Add the blueberries to the dough and mix until just combined.
4. On a lightly floured surface turn out the biscuit dough. Using a rolling pin or your hands, roll the dough out to a 1 inch thickness.
5. Use a biscuit cutter or the rim of a jar to cut out biscuits from the dough. Be sure to press straight down and not twist the cutter as you cut the dough. Twisting the cutter seals the edges of the dough and makes it harder for the biscuits to rise.
6. Continue to reshape and roll the leftover dough as you cut out biscuits, making sure to use all of the dough.
7. Safely remove the hot skillet from the oven and begin placing biscuits in the bottom of the skillet in a circle making sure the sides of the biscuits touch. This will help the biscuits to rise even more as they bake.
8. Bake the blueberry biscuits at 475 for 10-12 minutes or until the tops of the biscuits are golden brown.
9. Slather the tops of the biscuits with melted butter or take a stick of butter and rub the top of each of the warm biscuits.
10. Serve warm biscuits with additional butter and your favorite jelly.
