This stuffing muffin recipe uses nine recognizable ingredients. Bread, butter, salt, pepper, sage, poultry seasoning, chicken stock, celery and onion.

Fresh onion and celery bring a texture and taste that goes unmatched in comparison to the box mix.  High quality bread is the best part of this recipe, because it adds textural interest and flavor to the dish. 

Larger pieces of bread instead of breadcrumbs provide a great mouth feel. One taste of  homemade stuffing muffins and you will never want to use stuffing mix ever again. 

How to Serve Thanksgiving Better Than Stove Top Stuffing Muffins: 

Stuffing muffins function very similarly to dinner rolls at the Thanksgiving dinner table. Place them in a large bowl like rolls and serve along side your meal.

Drizzle stuffing muffins with butter, cranberry sauce, gravy or enjoy them plain. Stuffing muffins pair perfectly with a holiday meal or a regular comfort food meal at home.

Ingredients: 

2 loaves of bread cubed or approximately 40 oz of bread cubes
1 cup diced celery
1 cup diced onion
2 stick of butter
2 teaspoon sage
2 teaspoon poultry seasoning
2 teaspoon salt
1 teaspoon black pepper
1 cup chicken stock or turkey stock (add more as needed)

Step by Step Instructions: 

First, toast your bread slices. Cube or tear apart the two loaves of bread into small pieces to make 10 cups of bread. Divide the bread equally into two large mixing bowls. 

Next, dice 1 cup of onion and 1 cup of celery. Place in a microwave safe bowl and melt butter with the diced onion and celery. 

You could also melt the butter into the celery and onions in large skillet on the stove over medium heat. 

Split the butter, onion and celery mixture equally between the two bowls of bread. 

Then, add salt, black pepper, poultry seasoning and sage into each bowl of stuffing mixture. 

Next, add in just enough chicken broth to the stuffing mixture to wet it. Begin mixing the stuffing together with your hands. 

Spray muffin tin with cooking spray and fill the muffin tins with the stuffing mixture. You can also form the stuffing mixture into balls and place two inches apart on a cookie sheet. 

Bake the stuffing muffins at 375 degrees for 10-15 minutes or until the muffins are golden brown.  

Variations To Try: 

  • For a main dish or added protein, try adding sausage to make sausage stuffing muffins. 
  • Try a more crusty bread like artisan sourdough bread to give a crispier, crunchier texture (being sure to adjust the level of broth as needed). 
  • Use the stuffing mixture to make a Thanksgiving leftovers inspired casserole by adding shredded turkey, turkey gravy and stopping with cheese if desired.

Notes

The stuffing mixture should be moist enough to hold its shape but not so wet that it is mushy or dripping.
